This is the best banana bread I have ever made.
Our first foray into Paleo baking was a recipe from Slim Palate. The flavor was amazing, but the texture was a little off. Our second go-around involved some minor additions: Flaxseed and walnuts, and removed the cacao. Flaxseed gives a very cohesive, doughy texture in the absence of yeast! The flaxseed also helps it rise. Our doubled recipe:
- 1 cup coconut flour
- 1 cup almond flour
- 1/4 cup flaxseed meal
- 2 cups very ripe banana mashed well with a fork (2-3 medium bananas)
- 1 cup butter melted + extra butter unmelted for greasing
- 1/3 cup walnuts
- 1 teaspoon cinnamon
- 1 1/2 teaspoon baking soda
- 1/2 cup honey
- 8 eggs
- 1 teaspoon vanilla extract
- pinch of salt
Bake at 450 degrees for ~45 minutes. Stab the center with a butter knife to check for done-ness. If it comes out non-gooey, it is done!
